    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into even-sized sticks, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch. Drain and pat dry with paper towels.

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil to 350°F (175°C) over medium-high heat.

    Fry the Potatoes

    Carefully add the dried potato sticks in batches to the hot oil. Fry until they are golden brown and crispy, about 4-5 minutes. Remove with a slotted spoon and drain on paper towels.

    Sprinkle the hot fries with salt and paprika to taste. Serve immediately.

Onion Rings

    Prepare the Onions

    Peel the onions and slice them into 1/4 inch thick rings. Separate the rings and set them aside.

    In a mixing bowl, combine the all-purpose flour, cornmeal, baking powder, salt, and pepper. In a separate bowl, whisk together the egg and milk.

    Add the wet mixture to the dry ingredients and stir until well combined. The batter should be thick enough to coat the onion rings.
