    Prepare the Ribs

    Remove the membrane from the back of the ribs and trim any excess fat.

    Make the Dry Rub

    In a bowl, combine brown sugar, paprika, black pepper, salt, garlic powder, onion powder, and cayenne pepper to create the dry rub.

    Rub the Ribs

    Generously coat the ribs with the dry rub, ensuring all surfaces are covered. Wrap the ribs in plastic wrap and refrigerate for at least 1 hour, or preferably overnight.

    Preheat the Smoker

    Preheat your smoker to 225°F (107°C). Use wood chips of your choice for smoking, such as hickory or applewood.

    Smoke the Ribs

    Place the ribs in the smoker and smoke for 6 hours, maintaining a consistent temperature.

    Grill the Ribs

    After smoking, remove the ribs from the smoker and preheat your grill to medium-high heat. Place the ribs on the grill and brush with Western NC BBQ sauce. Grill for an additional 10-15 minutes, turning occasionally, until the sauce is caramelized.

    Remove the ribs from the grill, let them rest for a few minutes, then slice and serve with additional BBQ sauce on the side.
