In a large bowl, combine the ground chicken thighs, pork fat, minced garlic, smoked paprika, black pepper, cayenne pepper, and salt. Mix thoroughly until all ingredients are well incorporated.

Soak the natural hog casings in cold water for about 30 minutes to soften. Rinse them well under cold running water to remove any salt.

Using a sausage stuffer, carefully stuff the meat mixture into the prepared casings, being careful not to overstuff. Tie off the ends of the sausages with kitchen twine.

Preheat your smoker to 225°F (107°C). Add wood chips to the smoker box for flavor.
