    In a large bowl, combine the ground chicken thighs, pork fat, minced garlic, smoked paprika, black pepper, cayenne pepper, and salt. Mix thoroughly until all ingredients are well incorporated.

    Prepare the Casings

    Soak the natural hog casings in cold water for about 30 minutes to soften. Rinse them well under cold running water to remove any salt.

    Stuff the Sausage

    Using a sausage stuffer, carefully stuff the meat mixture into the prepared casings, being careful not to overstuff. Tie off the ends of the sausages with kitchen twine.

    Prepare the Smoker

    Preheat your smoker to 225°F (107°C). Add wood chips to the smoker box for flavor.

    Smoke the Sausages

    Place the sausages in the smoker and smoke for about 2 to 3 hours, or until they reach an internal temperature of 165°F (74°C).

    Cool and Serve

    Once smoked, remove the sausages from the smoker and let them cool slightly before slicing. Serve warm or refrigerate to use later.
