Preparation Steps
- 1
Prepare the Filling
In a large mixing bowl, combine the shredded smoked chicken, crumbled bacon, shredded jack cheese, shredded cheddar cheese, and chipotle ranch dressing. Mix well until all ingredients are evenly coated.
- 2
Assemble the Quesadillas
Lay out a flour tortilla on a flat surface. Spoon a generous amount of the chicken and cheese mixture onto one half of the tortilla, then fold the other half over to create a half-moon shape. Repeat with the remaining tortillas.
- 3
Cook the Quesadillas
Heat a non-stick skillet over medium heat. Place the folded quesadilla in the skillet and cook for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese has melted. Repeat for remaining quesadillas.
- 4
Serve
Cut each quesadilla into wedges and serve hot with salsa, sour cream, and guacamole on the side.
