Cook the Macaroni
In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce
In the same pot, melt the butter over medium heat. Stir in the flour and cook for about 1 minute until bubbly. Gradually whisk in the milk, stirring constantly until the mixture thickens. Add the cheddar cheese and stir until melted and smooth. Season with salt and black pepper to taste.

Combine Ingredients
Add the cooked macaroni to the cheese sauce and stir to combine. Fold in the pulled pork and queso cheese sauce until evenly distributed.

Spoon the pulled pork mac and cheese into bowls. Garnish with sliced green onions and additional cheese if desired.
