    Prep the Onions

    Slice the onions and smoke them in a smoker or sauté them in a pan over medium heat until caramelized, about 10-15 minutes.

    Form the Patty

    Season the ground beef with salt and black pepper. Form it into a patty that is slightly larger than the Texas toast.

    Cook the Patty

    In a skillet over medium-high heat, cook the patty for about 4-5 minutes on each side, or until it reaches your desired doneness.

    Assemble the Patty Melt

    On one slice of Texas toast, spread the smoked tomato aioli, place the cooked patty on top, add the smoked onions, pickled jalapeños, and top with the American cheese. Cover with the second slice of Texas toast.

    Grill the Sandwich

    In the same skillet, melt the butter over medium heat. Place the assembled sandwich in the pan and grill until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.

    Serve

    Remove the sandwich from the skillet, let it cool for a minute, then slice in half and serve hot.
