Preparation and Smoking

Prep the Wings
Rinse the chicken wings and pat them dry with paper towels. In a large mixing bowl, combine olive oil, salt, black pepper, garlic powder, onion powder, and paprika. Toss the wings in the mixture until they are evenly coated.

Soak Wood Chips
Soak the hickory wood chips in water for at least 30 minutes before grilling. This will help create smoke during the cooking process.

Prepare the Grill
Preheat your grill to medium-high heat. If using a charcoal grill, add the soaked wood chips to the coals. For a gas grill, place the chips in a smoker box or wrap them in aluminum foil and poke holes in the top.

Smoke the Wings
Place the wings on the grill over indirect heat. Close the lid and smoke for about 30-40 minutes, turning occasionally, until the wings are cooked through and have a nice smoky flavor.
