Prepare the Pork
Trim excess fat from the pork shoulder. Rub the yellow mustard all over the pork to act as a binder for the spices.

Make the Rub
In a bowl, mix together brown sugar, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Rub this mixture all over the pork.

Prepare the Smoker
Soak the hickory wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C).

Add BBQ Sauce
Mix the shredded pork with apple cider vinegar and BBQ sauce to taste.

Serve
Serve the pulled pork on buns with extra BBQ sauce if desired.
