    Prepare the Chicken

    Rinse the chicken under cold water and pat dry with paper towels. Rub the entire chicken with olive oil, then season generously with salt, black pepper, garlic powder, and paprika.

    Soak the Wood Chips

    Soak the hickory wood chips in water for at least 30 minutes before smoking.

    Prepare the Smoker

    Preheat your smoker to 225°F (107°C). Once the smoker is ready, add the soaked hickory wood chips.

    Smoke the Chicken

    Place the seasoned chicken in the smoker. Smoke for about 3-4 hours, or until the internal temperature reaches 165°F (74°C).

    Finish on the Grill

    Preheat your grill to medium-high heat. Transfer the smoked chicken to the grill and cook for an additional 10-15 minutes, turning occasionally, to crisp the skin.

    Serve

    Remove the chicken from the grill, let it rest for 10 minutes, then serve naked or with your choice of sauce.
