    Prepare the Brisket

    Rub the beef brisket with salt, black pepper, smoked paprika, garlic powder, and onion powder. Let it marinate for at least 1 hour, preferably overnight.

    Slow Smoke the Brisket

    Preheat your smoker to 225°F (107°C). Place the seasoned brisket in the smoker and smoke for about 6-8 hours, or until it reaches an internal temperature of 195°F (90°C) and is tender.

    Chop the Brisket

    Remove the brisket from the smoker and let it rest for 30 minutes. Once rested, chop the brisket into small pieces.

    Combine with BBQ Sauce

    Toss the chopped brisket with the BBQ sauce until well coated.

    Assemble the Sandwich

    Place a generous portion of the BBQ brisket on the bottom half of each hamburger bun. Top with coleslaw and pickles, then cover with the top half of the bun.

    Serve

    Serve the sandwiches warm with extra BBQ sauce on the side if desired.
