    Prepare the Brisket

    Rub the brisket with salt, black pepper, paprika, garlic powder, and onion powder. Let it sit for at least 30 minutes to absorb the flavors.

    Smoke the Brisket

    Preheat your smoker to 225°F (107°C). Place the brisket in the smoker and cook for about 6-8 hours, or until it reaches an internal temperature of 195°F (90°C).

    Chop the Brisket

    Once the brisket is done, remove it from the smoker and let it rest for about 30 minutes. After resting, chop the brisket into bite-sized pieces.

    Combine with BBQ Sauce

    In a large bowl, toss the chopped brisket with the Western NC BBQ sauce until well coated.

    Assemble the Sammies

    Place a generous portion of the BBQ brisket mixture onto each bun. Top with sliced onions and pickles. Serve immediately.
