Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add the sliced onions and bell peppers, season with salt and pepper, and sauté until they are soft and slightly caramelized, about 5-7 minutes.

Add the Brisket
Once the vegetables are done, add the chopped brisket to the skillet and cook for an additional 3-4 minutes, stirring occasionally until heated through.

Melt the Cheese
Lay the slices of white American cheese on top of the brisket and vegetable mixture. Cover the skillet with a lid for 1-2 minutes or until the cheese is melted.

Assemble the Wraps
Warm the flour tortillas in a separate skillet or microwave. Spoon the brisket and cheese mixture onto the center of each tortilla, drizzle with queso blanco, and wrap tightly.

Cut the wraps in half and serve immediately with any additional queso blanco on the side.
