    Prepare the Brisket

    Trim any excess fat from the brisket, ensuring a good balance of meat and fat.

    Make the Dry Rub

    In a bowl, mix together brown sugar, paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper.

    Rub the Brisket

    Generously apply the dry rub all over the brisket, making sure to cover all sides. Wrap it in plastic wrap and refrigerate for at least 2 hours, preferably overnight.

    Cook the Brisket

    Preheat your smoker or oven to 225°F (107°C). Place the brisket in the smoker or oven, fat side up, and cook for about 1.5 hours per pound, or until the internal temperature reaches 195°F (90°C).

    Cut into Cubes

    Once cooked, remove the brisket from the smoker/oven and let it rest for 30 minutes. Cut the brisket into 1-inch cubes.

    Toss in BBQ Sauce

    In a large bowl, toss the brisket cubes with Western NC BBQ sauce until evenly coated.

    Caramelize the Burnt Ends

    Return the sauced brisket cubes to the smoker or oven and cook for an additional 30-45 minutes until caramelized and crispy.

    Serve

    Serve the burnt ends hot with Mac's Sweet Pickle Blend on the side.
