Prepare the Apples
Preheat the oven to 350°F (175°C). In a large bowl, toss the sliced apples with granulated sugar, cinnamon, and nutmeg. Spread the mixture evenly in a greased 9x13 inch baking dish.

Mix the Topping
In a separate bowl, combine the brown sugar, flour, oats, baking powder, and salt. Stir in the melted butter and vanilla extract until crumbly.

Assemble and Bake
Sprinkle the topping evenly over the apple mixture in the baking dish. Bake in the preheated oven for 35-40 minutes, or until the apples are tender and the topping is golden brown.

Allow the cobbler to cool slightly before serving warm with a scoop of ice cream and a drizzle of caramel sauce on top.
