    Prepare the Brisket

    Trim excess fat from the brisket point and cut it into 1-inch cubes.

    Make the Dry Rub

    In a bowl, combine brown sugar, paprika, garlic powder, onion powder, black pepper, and salt.

    Rub the Brisket

    Generously coat the brisket cubes with the dry rub and let them sit for at least 30 minutes to absorb the flavors.

    Smoke the Brisket

    Preheat a smoker to 225°F (107°C). Place the brisket cubes in the smoker and cook for about 3 hours, or until they develop a nice bark.

    Sauce the Burnt Ends

    After 3 hours, toss the burnt ends with your favorite western NC BBQ sauce and return them to the smoker for an additional 1 hour.

    Serve

    Remove from the smoker and let rest for 10 minutes before serving with Mac's house pickles.
