Cooking Pasta

    Boil the Pasta

    In a large pot, bring water to a rolling boil. Add 1 tsp of salt to the water.

    Cook the Macaroni

    Add 2 cups of elbow macaroni to the boiling water. Cook according to package instructions until al dente, usually about 8-10 minutes.

    Add Vegetables

    In the last 3 minutes of cooking, add 1 cup of broccoli florets, 1 diced carrot, 1 diced bell pepper, and 1 cup of frozen peas to the pot. Stir gently.

    Drain and Set Aside

    Once cooked, drain the pasta and vegetables in a colander and set aside.

Making Cheese Sauce

    Melt Butter

    In the same pot, melt 2 tablespoons of butter over medium heat.

    Make Roux

    Whisk in 2 tablespoons of all-purpose flour and cook for about 1 minute to form a roux.

    Add Milk

    Gradually whisk in 2 cups of milk, stirring constantly until the mixture thickens and is smooth, about 5 minutes.

    Add Cheese and Spices

    Remove from heat, then stir in 2 cups of shredded cheddar cheese, 1 tsp of garlic powder, 1 tsp of onion powder, 0.5 tsp of salt, and 0.25 tsp of black pepper until well combined.

Combining

    Mix Pasta and Sauce

    Add the drained pasta and vegetables back into the pot with the cheese sauce. Stir until everything is fully coated with the sauce.

Topping and Baking

    Prepare Topping

    In a small bowl, mix together 0.5 cup of breadcrumbs, 0.25 cup of grated Parmesan cheese, and 2 tablespoons of chopped parsley.

    Transfer the mixture to a greased baking dish and sprinkle the breadcrumb topping evenly over the top. Bake in a preheated oven at 350°F (175°C) for 20 minutes or until golden brown.
