Method
Cooking the Pasta
Boil the Pasta
In a large pot, bring salted water to a boil. Add 2 cups of macaroni pasta and cook according to package instructions until al dente. Drain the pasta and set aside.
Making the Cheese Sauce
Prepare the Roux
In a medium saucepan over medium heat, melt 2 tablespoons of unsalted butter. Once melted, add 2 tablespoons of all-purpose flour, whisking constantly for about 1-2 minutes until the mixture is golden and bubbly.
Add Milk
Gradually whisk in 2 cups of milk, ensuring there are no lumps. Continue to cook, whisking frequently, until the mixture thickens and starts to bubble.
Incorporate Cheese
Reduce the heat to low and stir in 1 cup of shredded cheddar cheese and 1 cup of shredded mozzarella cheese, mixing until fully melted and smooth. Season with salt and black pepper to taste.
Combining and Baking
Mix Pasta and Sauce
Add the cooked macaroni pasta to the cheese sauce, stirring well to combine until all pasta is coated.
Prepare for Baking
If desired, transfer the macaroni and cheese to a baking dish. Top with 1 cup of breadcrumbs, 1 tablespoon of grated Parmesan cheese, and a sprinkle of paprika.
Bake
Preheat your oven to 350°F (175°C) and bake the dish for 20-25 minutes, until the top is golden and crispy.
