Preparation of Salsa

Make the Salsa
In a medium bowl, combine the black beans, roasted corn, diced red bell pepper, diced red onion, and chopped cilantro. Squeeze in the lime juice, and season with salt and pepper to taste. Stir well to combine, and set aside.

Assemble the Wrap
Lay a flour tortilla flat on a clean surface. In the center of the tortilla, layer 1/2 cup of pork carnitas, followed by 1/4 cup of the prepared salsa, 1/4 cup of shredded cheddar cheese, and a handful of tortilla strips.

Wrap it Up
Fold the sides of the tortilla over the filling, then roll the tortilla from the bottom up to enclose the filling completely. Repeat with the remaining tortillas and ingredients.

Serve
Cut each wrap in half diagonally and serve immediately. Enjoy your Southwest Wrap with additional salsa on the side if desired.
