Cook the Pasta
In a large pot, bring salted water to a boil. Add the macaroni pasta and cook according to package instructions until al dente. Drain and set aside.

In a large saucepan over medium heat, melt the unsalted butter. Once melted, whisk in the flour and cook for 1-2 minutes until golden, stirring constantly.

Gradually whisk in the milk, ensuring there are no lumps. Continue to cook for about 5-7 minutes until the mixture thickens.

Incorporate Cheeses
Lower the heat and add the cream cheese, followed by the shredded cheddar cheese and Philadelphia cream cheese. Stir until the cheeses are completely melted and the sauce is smooth.

Add salt, black pepper, garlic powder, and onion powder to the cheese sauce. Stir well to combine.

In a large mixing bowl, combine the cooked macaroni and cheese sauce. If using diced cooked chicken, fold it in gently.
