Pasta Preparation

Boil the Water
In a large pot, bring 4 cups of water to a boil over high heat. Add 1 tsp of salt to the boiling water.

Cook the Pasta
Add 2 cups of macaroni pasta to the boiling water. Cook for about 8-10 minutes, or until al dente. Stir occasionally to prevent sticking.

Drain the Pasta
Once cooked, drain the pasta in a colander and set aside.

Make the Roux
Once the butter is melted, whisk in 2 tablespoons of all-purpose flour. Cook for about 1-2 minutes to form a roux, stirring constantly.

Add Milk
Slowly whisk in 2 cups of milk until smooth and combined. Continue to cook until the mixture thickens, about 3-5 minutes.

Add Cheese and Seasonings
Remove from heat and stir in 2 cups of shredded cheddar cheese, 1 tsp of mustard powder, 1 tsp of paprika, 0.5 tsp of salt, and 0.25 tsp of black pepper until the cheese is fully melted and the sauce is creamy.
Combine and Serve

Add the drained macaroni to the cheese sauce, stirring to coat the pasta evenly.

Prepare Toppings (Optional)
If using, preheat the oven to 350°F (175°C). In a small bowl, mix 0.5 cups of breadcrumbs with 0.5 cups of grated Parmesan cheese.

Transfer the macaroni and cheese mixture to a baking dish, and sprinkle the breadcrumb and cheese mixture on top. Bake for 20-25 minutes or until the top is golden brown and crispy.
