Pasta and Potatoes

Method

Preparation of Potatoes

  1. 1

    Bake the Potatoes

Preheat your oven to 400°F (200°C). Wash the russet potatoes, pierce them several times with a fork, and place them directly on the oven rack. Bake for 45-60 minutes until tender.

Cooking the Pasta

  1. 2

    Cook the Macaroni

In a large pot, bring salted water to a boil. Add elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Making the Cheese Sauce

  1. 3

    Prepare the Cheese Sauce

In a saucepan over medium heat, melt butter. Once melted, stir in flour and cook for about 2 minutes until golden. Gradually whisk in milk, continuing to stir until the mixture thickens. Reduce heat to low and add cheddar cheese, cream cheese, salt, black pepper, and garlic powder. Stir until smooth and creamy.

Combining Ingredients

  1. 4

    Combine Pasta, Potatoes, and Sauce

Once the potatoes are baked, remove them from the oven and let them cool for a few minutes. Scoop out the insides and mash them lightly. In a large mixing bowl, combine the cooked macaroni, mashed potatoes, and cheese sauce. Mix until well combined.

Serving

  1. 5

    Top and Serve

Serve the loaded baked potato mac in bowls. Top with crumbled bacon, chopped green onions, and a dollop of sour cream. Enjoy!
