Cooking Chicken

Prepare the Chicken

Preheat your grill or oven to medium-high heat. Season the chicken breasts with salt and pepper on both sides.

Cook the Chicken

Place the chicken on the grill or in the oven. Cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). During the last few minutes of cooking, brush the BBQ sauce over the chicken.

Rest the Chicken

Once cooked, remove the chicken from heat and let it rest for 5 minutes before slicing.

Making the Salsa

Combine Salsa Ingredients

In a mixing bowl, combine the roasted corn, black beans, diced red onion, chopped cilantro, lime juice, salt, and pepper. Mix well to combine.

Assembling the Dish

Prepare the Lettuce

Chop or tear the romaine lettuce into bite-sized pieces and place it in a large serving bowl.

Add Toppings

Top the romaine with the sliced BBQ chicken, corn and black bean salsa, shredded cheddar cheese, croutons, and tortilla strips.

Serve

Drizzle additional BBQ sauce and ranch dressing over the top before serving, if desired.
