Marinate the Chicken
Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it's well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours.

Cook the Chicken
Remove the chicken from the marinade and discard the marinade. Cook the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

Assembling the Sandwich

Prepare the Bun
Slice the sandwich rolls or brioche buns in half and toast them lightly if desired.

Build the Sandwich
Spread guacamole generously on the bottom half of each bun. Place the cooked chicken with melted cheese on top, followed by slices of tomato and a handful of fresh spinach. Top with the other half of the bun.

Serve the sandwiches immediately with your choice of side.
