    Prepare the Pork Collar

    Preheat your grill to medium-high heat. Season the pork collar with olive oil, salt, black pepper, and fresh thyme. Let it marinate for at least 30 minutes.

    Grill the Pork

    Place the pork collar on the grill and cook for about 20-25 minutes, turning occasionally until it reaches an internal temperature of 145°F (63°C). Remove from the grill and let it rest.

    Char the Peaches and Fennel

    While the pork is resting, slice the peaches in half and remove the pits. Cut the fennel bulb into wedges. Brush both the peaches and fennel with olive oil and season with salt. Place them on the grill and char for about 3-5 minutes per side until they have nice grill marks and are tender.

    Drizzle with Burnt Chile Honey

    Once grilled, remove the peaches and fennel from the grill. Drizzle the burnt chile honey over the charred peaches and fennel.

    Slice the pork collar and serve it alongside the grilled peaches and fennel, drizzled with the burnt chile honey.
