Prepare the Steak
Remove the steak from the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This helps it cook evenly.

Preheat the Pan
Heat a large cast-iron skillet over medium-high heat for about 5 minutes until it's hot.

Add Aromatics
In the last minute of cooking, add the garlic cloves and fresh rosemary to the pan. Spoon the melted fat over the steak for added flavor.

Use a meat thermometer to check the internal temperature. For medium-rare, it should read 135°F (57°C).

Remove the steak from the skillet and let it rest on a cutting board for about 5-10 minutes before slicing.
