Cooking Instructions

  1. 1

    Prepare the Steak

Take the center cut filet out of the refrigerator and let it rest at room temperature for about 30 minutes before cooking.

  2. 2

    Preheat the Pan

Heat a cast-iron skillet or a heavy-bottomed pan over medium-high heat. Add olive oil and allow it to heat until shimmering.

  3. 3

    Season the Steak

Generously season both sides of the filet with salt and black pepper.

  4. 4

    Sear the Steak

Place the filet in the hot skillet and sear for about 4-5 minutes on one side without moving it.

  5. 5

    Flip and Add Flavor

Flip the steak and add butter and fresh rosemary to the skillet. Continue to cook for another 4-5 minutes, basting the steak with the melted butter.

  6. 6

    Check for Doneness

Use a meat thermometer to check the internal temperature. For medium-rare, it should read 130-135°F (54-57°C).

  7. 7

    Rest the Steak

Remove the filet from the skillet and let it rest on a cutting board for 5-10 minutes to allow the juices to redistribute.

  8. 8

    Serve

Slice the filet and serve immediately, drizzling any remaining pan juices over the top.
