Prepare the Steak
Take the center cut filet out of the refrigerator and let it rest at room temperature for about 30 minutes before cooking.

Season the Steak
Generously season both sides of the filet with salt and black pepper.

Sear the Steak
Place the filet in the hot skillet and sear for about 4-5 minutes on one side without moving it.

Check for Doneness
Use a meat thermometer to check the internal temperature. For medium-rare, it should read 130-135°F (54-57°C).

Rest the Steak
Remove the filet from the skillet and let it rest on a cutting board for 5-10 minutes to allow the juices to redistribute.

Slice the filet and serve immediately, drizzling any remaining pan juices over the top.
