Prepare the Marinade
In a bowl, combine the bourbon, soy sauce, brown sugar, minced garlic, black pepper, Worcestershire sauce, olive oil, and chopped thyme. Mix well until the sugar is dissolved.

Marinate the Steak
Place the ribeye steaks in a resealable plastic bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.

Preheat the Grill
Preheat your grill to medium-high heat. Remove the steaks from the marinade and discard the marinade.

Grill the Ribeyes
Grill the ribeye steaks for about 6-8 minutes per side for medium-rare, or until they reach your desired doneness. Use a meat thermometer for accuracy (130°F for medium-rare).

Rest and Serve
Remove the steaks from the grill and let them rest for 5 minutes before slicing. Serve with your choice of two sides.
