Steak Preparation

    Cook the Steak

    Season the flat iron steak with olive oil, salt, and black pepper. Heat a skillet over medium-high heat and cook the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Let it rest for a few minutes before slicing.

Potato Preparation

    Prepare the Potatoes

    Peel and dice the Kennebec potatoes into small cubes. Boil in salted water until tender, about 10-12 minutes. Drain and return to the pot. Add honey and butter, and toss until well coated. Season with salt to taste.

Egg Preparation

    Cook the Eggs

    In a non-stick skillet, melt butter over low heat. Crack the eggs into the skillet and cook to your liking (sunny-side up, over-easy, etc.). Season with salt and pepper.

Hollandaise Sauce Preparation

    Make the Hollandaise Sauce

    In a bowl, whisk the egg yolks and lemon juice until thick. Melt the butter in a saucepan and slowly drizzle it into the egg mixture, whisking constantly until the sauce is smooth. Season with salt to taste.

Assembly

    Plate the Dish

    On a plate, arrange the sliced steak, add the honey brown butter Kennebec potatoes, place the cooked eggs on top, and drizzle with hollandaise sauce. Serve immediately.
