Lemon Garlic Ricotta

Method

Prepare Lemon Garlic Ricotta

Mix Ingredients

In a medium bowl, combine ricotta cheese, lemon zest, minced garlic, salt, and black pepper. Mix until smooth and well combined. Set aside.

Prepare Artichoke & Caper Gremolata

Combine Gremolata Ingredients

In another bowl, mix the chopped artichoke hearts, capers, parsley, minced garlic, lemon juice, and olive oil. Stir until well combined.

Assemble the Toastie

Layer Ingredients

On two slices of sourdough bread, spread a generous layer of the lemon garlic ricotta, followed by slices of smoked salmon and the artichoke & caper gremolata. Top with the remaining slices of bread.

Cook Toasties

Heat olive oil in a skillet over medium heat. Add the assembled toasties and cook until golden brown and crispy on both sides, about 3-4 minutes per side.

Serve

Plate and Garnish

Slice the toasties in half and serve warm, topped with sliced celery heart, fresh dill, and pickled shallots. Accompany with a side of fruit or hashbrowns.
