Preparation Steps

  1. 1

    Prepare the Brine

In a large bowl, mix the brown sugar, salt, black peppercorns, and dill. This will be your brining mixture.

  2. 2

    Brine the Salmon

Place the salmon fillet in a shallow dish and cover it with the brining mixture. Make sure the salmon is evenly coated. Cover with plastic wrap and refrigerate for 12-24 hours.

  3. 3

    Prepare the Smoker

Preheat your smoker to 200°F (93°C). If using a stovetop smoker, follow the manufacturer’s instructions.

  4. 4

    Smoke the Salmon

Remove the salmon from the brine and rinse under cold water. Pat dry with paper towels. Brush the salmon with liquid smoke for added flavor. Place the salmon in the smoker and smoke for 1-2 hours, or until the salmon reaches your desired level of smokiness.

  5. 5

    Serve the Salmon

Once smoked, let the salmon cool slightly. Slice thinly and serve with lemon wedges for garnish.
