Preparation of Ingredients

Prepare the Potatoes

Peel and cube the Kennebec potatoes. Boil in salted water until fork-tender, about 15 minutes. Drain and set aside.

Sauté Leeks

Slice leeks and sauté in a pan with a tablespoon of butter until softened, about 5 minutes.

Marinate Tomatoes

Halve the gem tomatoes and marinate them in olive oil, salt, and pepper for 10 minutes.

Prepare Kale

Rinse kale, remove stems, and chop into bite-size pieces. Sauté in olive oil until wilted, about 3-4 minutes.

Cooking the Steelhead

Cook the Steelhead

In a skillet, melt honey brown butter over medium heat. Add the steelhead fillets and cook for 4-5 minutes on each side until cooked through.

Poaching the Eggs

Poach the Eggs

Bring a pot of water to a simmer. Crack each egg into a small bowl and gently slide into the water. Poach for about 3-4 minutes, then remove with a slotted spoon.

Assembly

Plate the Dish

On a plate, layer the sautéed kale, followed by the sautéed leeks, and then the boiled potatoes. Top with the steelhead fillet, followed by the poached egg. Drizzle with hollandaise sauce and sprinkle with gremolata and micro chives.
