Prepare the mussels
Rinse the mussels under cold water and remove any beards or debris. Discard any mussels that are open and do not close when tapped.

Add the vegetables
Dice the tomato and jalapeno pepper, and add them to the pot. Stir and cook for about 5 minutes until softened.

Introduce the coconut milk
Pour in the coconut milk and stir to combine. Bring to a gentle simmer.

Cook the mussels
Add the cleaned mussels to the pot, cover, and cook for about 5-7 minutes until the mussels have opened. Discard any that remain closed.

Finish with cilantro
Stir in the chopped cilantro and adjust seasoning with salt and pepper to taste.

Serve the coconut curry mussels hot with slices of sourdough bread on the side for dipping.
