Preparation of Taquitos

Prepare the Filling
In a bowl, combine your choice of shredded protein (chicken, beef, or beans). If using cheese, mix it in as well. Set aside.

Assemble Taquitos
Heat a non-stick skillet over medium heat. Warm each corn tortilla slightly until pliable, about 10-15 seconds per side. Place 2 tablespoons of the filling on one side of the tortilla, roll tightly, and secure with a toothpick if necessary.

Heat the Oil
In a large, deep pot or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Taquitos
Carefully place 3-4 taquitos in the hot oil, avoiding overcrowding. Fry for about 3-5 minutes until golden brown and crispy, turning occasionally. Remove with a slotted spoon and place on paper towels to drain excess oil.

Plate the Dish
On a large platter, serve the taquitos alongside the cooked rice and refried beans. Garnish with shredded lettuce, diced tomatoes, and a generous dollop of sour cream.
