Caramel

Method

Caramel Preparation

  1. 1

    Make the Caramel

In a medium saucepan over medium heat, combine the sugar and water. Stir gently until the sugar dissolves and the mixture starts to boil.

  2. 2

    Caramelize the Sugar

Continue cooking without stirring until the mixture turns a deep amber color, about 8-10 minutes. Remove from heat immediately to prevent burning.

  3. 3

    Coat the Pan

Quickly pour the caramel into a round cake pan, tilting the pan to coat the bottom evenly. Set aside to cool and harden.

Custard Preparation

  1. 4

    Blend the Custard Ingredients

In a blender, combine the sweetened condensed milk, evaporated milk, eggs, and vanilla extract. Blend until smooth and well combined.

  2. 5

    Pour into Caramel-Coated Pan

Carefully pour the custard mixture into the caramel-coated cake pan.

  3. 6

    Prepare for Baking

Preheat the oven to 350°F (175°C). Place the filled cake pan in a larger baking dish and add hot water to the baking dish until it reaches halfway up the sides of the cake pan.

  4. 7

    Bake the Flan

Bake in the preheated oven for about 50-60 minutes or until a knife inserted in the center comes out clean.

  5. 8

    Cool and Chill

Remove from the oven and let it cool at room temperature. Once cooled, refrigerate for at least 4 hours or overnight.

  6. 9

    Serve

To serve, run a knife around the edges of the flan and invert it onto a serving plate. The caramel sauce will flow over the top.
