Prepare the Crust
In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Cut the unsalted butter into small pieces and add to the flour mixture. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

Form the Dough
Gradually add ice water, one tablespoon at a time, mixing until the dough holds together but is not sticky. Divide the dough in half, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

Roll out the Dough
After chilling, roll out one dough disk on a floured surface to fit your pie dish. Place it in the dish and trim the edges.

Prepare the Apples
Peel, core, and slice the apples into thin slices. In a large bowl, combine the sliced apples with granulated sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss until evenly coated.

Pour the apple filling into the prepared pie crust, spreading it evenly.
