Crust Preparation

Prepare the Crust
Preheat the oven to 350°F (175°C). In a medium mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.

Form the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake in the preheated oven for about 10 minutes or until lightly browned. Remove from oven and let cool.

Prepare the Filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add granulated sugar and mix until fully incorporated.

Add Remaining Ingredients
Add sour cream, vanilla extract, and eggs one at a time, mixing well after each addition until the mixture is smooth and uniform.

Combine with Crust
Pour the filling over the cooled crust in the springform pan. Smooth the top with a spatula.
Baking and Topping

Bake the Cheesecake
Bake in the oven for 50-60 minutes at 325°F (160°C), or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for another hour to cool gradually.

Remove the cheesecake from the oven and let it cool to room temperature. Then, refrigerate for at least 4 hours or overnight for best results.

Once chilled, top the cheesecake with sliced fresh strawberries and drizzle with strawberry preserves.
