Prepare Taco Shells

Fry Corn Tortillas
In a skillet, heat vegetable oil over medium heat. Once hot, fry each corn tortilla for about 30 seconds on each side until crispy. Remove and place on paper towels to drain excess oil. Sprinkle with salt while still hot.

Cook Meat
In a skillet, cook the ground beef or turkey over medium heat until browned. Drain excess fat. Stir in taco seasoning and cook according to package instructions, usually about 5 minutes.

Prepare Toppings
While the meat is cooking, prepare the toppings: shred the cheese, wash and shred the lettuce, and dice the tomatoes.

Heat Beans
In a small saucepan, heat the canned black beans over medium heat until warmed through. Stir in chopped cilantro and lime juice just before serving.
Assembly

Assemble Taco Plates
On a plate, create a base of rice and beans. Top with the crispy taco shells filled with the cooked meat and garnish with shredded cheese, lettuce, tomatoes, and sour cream. Serve immediately.
