    Remove the husks from the tomatillos and rinse them under cold water to remove any stickiness. Cut them in half.

    Cut the jalapeño peppers in half lengthwise and remove the seeds for less heat, if desired. You can leave some seeds for extra heat.

    Chop the Onion and Garlic

    Peel and chop the onion into quarters. Peel the garlic cloves.

    Rinse the cilantro under cold water and shake off excess moisture.

    Preheat your oven to 400°F (200°C). On a baking sheet, place the tomatillos, jalapeños, onion, and garlic. Drizzle with olive oil and sprinkle with salt. Roast for 20-25 minutes, or until the tomatillos are soft and slightly charred.

    Blend the Salsa Verde

    Once roasted, let the vegetables cool slightly. In a blender or food processor, combine the roasted vegetables with cilantro, lime juice, salt, and black pepper. Blend until smooth or to your desired texture.
