Prepare the Ingredients
Wash and chop all vegetables: diced potatoes, sliced carrots, diced tomatoes, and chopped onion. Mince the garlic.

Cut the Chicken
Cut the chicken into bite-sized pieces and season lightly with salt and pepper.

Add Chicken
Add the chicken pieces to the pot and cook until slightly browned, about 5-7 minutes.

Add Remaining Ingredients
Stir in the diced potatoes, sliced carrots, and diced tomatoes. Cook for another 3-4 minutes, stirring occasionally.

Add Broth and Seasonings
Pour in the chicken broth, and add bay leaf, thyme, salt, and black pepper. Bring the mixture to a boil.

Simmer
Once boiling, reduce heat to low and add the uncooked rice. Cover and let simmer for 20-25 minutes, or until the rice and vegetables are tender. Remove the bay leaf before serving.
