Prepare the Fresh Catch

    Marinate the Fish

    In a bowl, mix olive oil, lemon juice, minced garlic, chopped parsley, salt, and black pepper to create a marinade. Add the fresh fish fillets and coat them well. Let the fish marinate for at least 15 minutes.

    Cook the Fish

    Heat a skillet over medium heat and add a little more olive oil if needed. Once hot, add the marinated fish fillets to the skillet. Cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork.

Prepare the Rice

    Cook the Rice

    In a medium saucepan, combine long grain rice, water, and salt. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover, and simmer for about 15-20 minutes or until the rice is tender and the water is absorbed. Fluff with a fork before serving.

    Cook the Beans

    In a small saucepan, heat olive oil over medium heat. Add diced onion and sauté for about 3-4 minutes until translucent. Stir in the rinsed black beans, cumin, salt, and black pepper. Cook for another 5-7 minutes until heated through, stirring occasionally.
