Fish Fillet Preparation

Prepare the Coating
In a shallow bowl, mix together the all-purpose flour, cornmeal, salt, black pepper, and paprika.

Coat the Fish
Dip each fish fillet first into the egg wash, allowing excess to drip off, then coat in the flour mixture, pressing gently to adhere.
Cooking the Fish

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until hot but not smoking.

Fry the Fillets
Carefully add the coated fish fillets to the hot oil and fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
Sandwich Assembly

Prepare the Buns
Lightly toast the burger buns if desired.

Assemble the Sandwich
Spread tartar sauce on the bottom half of each bun, add a lettuce leaf, place the fried fish fillet on top, followed by slices of tomato and pickles. Top with the other half of the bun.
