Rice and Beans

Method

Preparing the Fish

  1. 1

    Season the Fish

Pat the fish fillets dry with paper towels. Drizzle olive oil over the fillets and season with salt, black pepper, and lemon juice. Let marinate for 15 minutes.

  2. 2

    Sear the Fish

Heat a skillet over medium-high heat. Add a little olive oil to the skillet. Once hot, add the fish fillets and sear for 3-4 minutes on each side until golden brown and cooked through. Remove from heat and garnish with fresh parsley.

Cooking the Shrimp

  1. 3

    Prepare the Shrimp

In the same skillet used for the fish, melt butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

  2. 4

    Cook the Shrimp

Add the shrimp to the skillet. Sprinkle with paprika and cook for 3-4 minutes until the shrimp are pink and opaque. Stir in chopped cilantro before removing from heat.

Making Rice and Beans

  1. 5

    Cook the Rice

In a saucepan, combine white rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender and water is absorbed.

  2. 6

    Prepare the Beans

In a small pot, heat the canned black beans over medium heat. Add cumin and salt, and stir to combine. Simmer for about 5 minutes until heated through.
