Preheat the Oven
Preheat your oven to 350°F (175°C).

Prepare the Filling
In a large bowl, combine the cooked shredded chicken, chopped onion, chopped bell pepper, cilantro, cumin, salt, and black pepper. Mix well until all ingredients are evenly combined.
Assembling the Enchiladas

Fill the Tortillas
Take a corn tortilla and place a generous amount of the filling in the center. Roll the tortilla tightly around the filling and place it seam-side down in a baking dish. Repeat for all tortillas.

Add Sauce and Cheese
Pour half of the enchilada sauce over the rolled tortillas, making sure they are well-coated. Sprinkle half of the shredded cheese on top of the sauce.
Baking

Bake the Enchiladas
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. After 20 minutes, remove the foil, add the remaining enchilada sauce and cheese on top, and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Serve
Remove the enchiladas from the oven and let them cool for a few minutes before serving. Garnish with additional cilantro if desired.
