Preparing the Broth

Step 1: Make the Broth
In a large pot, add 4 cups of water, shrimp shells, garlic cloves, bay leaves, black peppercorns, and salt. Bring to a boil over medium-high heat.

Once boiling, reduce the heat and let the broth simmer for about 30 minutes to extract flavors from the shells and spices.

After 30 minutes, strain the broth through a fine mesh sieve into a bowl, discarding the solids. Set the broth aside.
Cooking the Shrimp

Step 4: Boil the Shrimp
In the same pot, bring the strained broth back to a boil. Add the large shrimp and cook for about 3-4 minutes or until they turn pink and opaque.

Step 5: Drain the Shrimp
Once cooked, remove the shrimp from the pot and let them cool slightly before chopping them into bite-sized pieces.

In a large mixing bowl, combine the diced tomatoes, red onion, chopped cilantro, and lime juice. Add the chopped shrimp and mix well.
