Incorporate Flour
Once boiling, remove from heat and stir in the flour until the mixture forms a ball. Allow to cool for about 5 minutes.

Add Eggs
Add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy.

Heat Oil
In a large, deep skillet, heat the vegetable oil to 375°F (190°C).

Mix Cinnamon Sugar
In a shallow bowl, combine granulated sugar and ground cinnamon. Set aside.
Frying Churros

Pipe and Fry
Using a piping bag fitted with a star tip, pipe strips of dough directly into the hot oil. Fry until golden brown, about 2-3 minutes per side.

Prepare Chocolate Sauce
In a small saucepan over medium heat, heat the heavy cream until it starts to simmer. Remove from heat and add the chocolate chips and vanilla extract.

Let sit for a minute, then stir until the chocolate is completely melted and the sauce is smooth.
