    Prep the Potatoes

    Wash and peel the potatoes. Using a mandoline or sharp knife, slice the potatoes into thin rounds, about 1/8 inch thick.

    Soak the Slices

    Place the potato slices in a bowl of cold water for at least 30 minutes to remove excess starch. This helps them become crispier when fried.

    Dry the Slices

    After soaking, drain the potatoes and pat them dry with a clean kitchen towel to remove excess moisture.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to check the temperature.

    Carefully add a handful of potato slices to the hot oil. Fry in batches for about 3-4 minutes or until golden brown and crispy. Remove chips with a slotted spoon and place on paper towels to drain excess oil.
