Preparation

    Prepare the Pork

    Cut the pork shoulder into large chunks, about 2 inches. Season with salt and black pepper.

    Soak the Chiles

    In a pot, bring water to a boil. Remove from heat and add the dried ancho and guajillo chiles. Let them soak for about 15 minutes until soft.

Cooking the Sauce

    Blend the Sauce

    In a blender, combine the soaked chiles (remove stems and seeds), garlic, onion, cumin, oregano, and chicken broth. Blend until smooth.

    Cook the Sauce

    In a large pot, heat a tablespoon of oil over medium heat. Pour in the blended sauce and simmer for about 10 minutes, stirring occasionally.

Cooking the Pork

    Simmer the Pork

    Add the seasoned pork chunks to the pot with the sauce. Cover and simmer on low for about 2 hours, or until the pork is tender and easily shredded.

    Cook the Rice

    In a separate pot, cook the rice according to package instructions.

    Prepare the Beans

    In a saucepan, heat the black beans over medium heat until warmed through.

    Warm the Tortillas

    Warm the flour and/or corn tortillas on a hot skillet for about 30 seconds on each side until pliable.

Serving

    Plate the Dish

    Serve the Chile Colorado over a bed of rice, with beans on the side, and tortillas for wrapping.
