Method

Shrimp Preparation

  1. 1

    Prepare the Shrimp

Rinse the whole shrimp under cold water and pat dry with paper towels.

  2. 2

    Sauté Garlic

In a large skillet over medium heat, melt 2 tablespoons of butter and 2 tablespoons of olive oil. Add the minced garlic (6 cloves) and sauté for about 2 minutes until fragrant.

  3. 3

    Cook Shrimp

Add the shrimp to the skillet. Season with salt, black pepper, and red pepper flakes. Cook for about 3-5 minutes, turning shrimp halfway through, until they are pink and opaque.

  4. 4

    Finish with Lemon Juice

Remove the skillet from heat and stir in the remaining 2 tablespoons of butter and the lemon juice. Toss to coat the shrimp in the garlic butter sauce.

Rice Preparation

  1. 5

    Cook the Rice

In a saucepan, combine the 1 cup of white rice, 2 cups of water, and 1 teaspoon of salt. Bring to a boil.

  2. 6

    Simmer

Once boiling, reduce heat to low, cover, and simmer for about 18-20 minutes until the rice is tender and water is absorbed.

  3. 7

    Fluff and Set Aside

Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.

Beans Preparation

  1. 8

    Sauté Onion and Garlic

In a small saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic (2 cloves) and sauté until the onion is translucent.

  2. 9

    Heat the Beans

Add the canned black beans (drained and rinsed) to the saucepan along with 1 teaspoon of cumin and 1 teaspoon of salt. Stir to combine and heat through for about 5 minutes.

  3. 10

    Serve

Once heated, remove from heat and set aside until ready to serve.
