Prepare the Collards
Wash the collard greens thoroughly under cold water. Remove the tough stems and chop the leaves into bite-sized pieces.

Cook the Bacon
In a large pot or Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the rendered fat in the pot.

Sauté the Aromatics
Add the chopped onion to the pot and sauté in the bacon fat for about 5 minutes until translucent. Add minced garlic and red pepper flakes, and sauté for another minute.

Pour in the chicken broth and bring to a simmer. Reduce heat to low, cover, and cook for about 30 minutes until the collards are tender.
