Prepare the Potatoes
Wash and peel the Idaho potatoes. Cut them into thin strips to make fries.

Soak the Potatoes
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Drain the soaked potatoes and pat them dry with paper towels. Fry them in the hot oil in batches until golden brown and crispy, about 5-7 minutes per batch.

Drain and Season
Remove the fries from the oil and drain on paper towels. While they are still hot, sprinkle with salt and furikake seasoning.

Serve
Serve the fries hot with a generous drizzle of acevichado sauce on top.
